These are my favourite fancy looking potatoes so far. Perfect for a Christmas dinner or any other dinner when you want to make your potatoes a little more fancy. I made them with home made
herb butter. But your could also use oil with some fresh herbs or plain vegan butter. Your choice...
- 4 medium potatoes (the ones that stay firm when cooked)
- 4 tbsp vegan herb butter
- Sea salt
- More fresh herbs (optional)
Preheat oven to 200 degrees Celsius
Wash the potatoes under warm water until all the dirts has been removed.
Cut small slices into the potatoes. If you place the potato on a large spoon it will prevent your knife from cutting to far down into the potato.
Place them into an oven dish and melt some of the butter in a pan over low heat.
Spoon the butter across the potatoes make sure all sides are covered. Possibly some in the open ridges.
Place in the preheated oven for about 45 minutes. Brushing some of the butter across the potatoes every 15 minutes.
Remove from the oven when tender on the inside and crunchy on the outside.
