Doesn't this one look so cool?! And so super easy and quick to make. To be clear it wasn't me who thought of making it into a Christmas tree but absolutely awesome with my vegan pesto. It
tastes best with homemade pesto but you can always use store bought if you can find a vegan kind. This recipe is a lot of fun to make with and for kids.
- 2 sheets puff pastry
- home made pesto or store bought vegan pesto
- 70g basil
- 1/4 cup pine nuts
- 1 tbsp lime juice
- pinch of salt
- 1 tbsp nutritional yeast
- 1/4 cup extra virgin olive oil
If you are making homemade pesto do this first.
Preheat oven to 200 degrees celsius.
Cut the sheets of pastry into a tree shape so pretty much stem plus large triangle on top.
Spoon and brush the pesto on one tree and place the second on top of it.
Cut little slits for the branches into the sides. Then twist them. If you have longer branches you can twist them more then once. if not just twist once and it will still look cool.
I used my left over puff pastry to make little savoury croissants.
Place everything on a piece of baking paper and place on a oven rack.
Bake for about 15 minutes until golden brown.
Pour the pine nuts into a hot frying pan. Roast them until they start to colour
place everything in a foodprocessor and blitz until you have to right consistency.
