I found out that Provamel and Alpro now have vegan kwark. Which is something like yogurt but then a lot less fluid. We Dutchies make pie out of it but since I have gone vegan I have never been
able to make something that tasted just like the real thing! Until I made it last week with provamel kwark and alpro soya whipped cream! My whole family was happy with the result :P
So for my fellow dutchies who have been missing it just like me, here is my recipe:
Preparation time: 30 min
Waiting time: 2 hours minimum
500g soy kwark (Provamel)
250ml soy whipped cream (alpro soya)
Juice of one Lemon
500g fresh strawberries
8g Agar Agar powder
1/4 cup agave syrup
350g tia maria biscuits
200g vegan butter
8tsp palm sugar
Crush the cookies to powder in a food proccesor or with your hands.
Melt the butter in a little pan.
In a bowl mix the cookie powder, sugar, and butter
Grease a pie tray
Pour the crust mixture and press down well into the tray to make the crust.
Place in the fridge until the filing is ready to be poured.
Crush the strawberries in a foodprocessor until it is a smooth puree. Save a couple for decorating.
Pour the lemon juice and strawberry puree in a small pan. Turn of the fire and add the Agar Agar. Bring to a boil and let simmer for a couple of minutes while stirring.
Whip the cream so it is nice and frothy.
Stir the kwark through the whipped cream and add the strawberry mixture. Combine well so there are no color differences.
Pour on top of the crust and place back into the fridge to set.
You might also want to try it with forest fruits! (raspberries, blueberries, and blackberries). Use the same amount as with the strawberries and some extra for on the top. :-)
